Raw Cheese by Chef Joi

This past Monday, I featured a raw cheese.  I had so many people who were hesitant to try it.  The thought of “raw cheese” for them brought up visions of something that would make them sick.  I had to explain repeatedly that there was no diary in the cheese.  I must say that after these folks finally took the plunge and tried the cheese, they kept coming back for more.

The other thing that convinced so many to try the cheese was that I prepared right there in front of them.  Some said it tasted like mustard.  This was due to the vinegar.  So I would suggest that you adjust the amount of the vinegar you use.  I used Bragg’s Apple Cider Vinegar which is very strong.  So start with one tablespoon and taste.  Add more until you have the right amount.  I would not suggest that you exceed 2 and 1/2 tablespoons of ACV though.

This is a simple and quick recipe to prepare.  It will take you longer to gather the simple ingredients than it will for you to prepare it.  So here you go:

Raw Nut-Free Cheese Spread by Chef Joi

It is absolutely amazing how much this recipe tastes like diary-cheese.  However, this is good for you and can be whipped up in less than ten minutes.

Ingredients:

1 cup pine nuts (this is actually a seed)
1/2 cup sunflower seeds
2 1/2 Tablespoons raw apple cider vinegar
1 teaspoon sea salt

1 teaspoon turmeric
1/4 cup water

Instructions:

Blend all ingredients until creamy.  Enjoy.
