This is a first. I am actually posting the recipe before I do the demonstration for Meatless Monday. But because I have been so busy with getting my recipe book published, I don’t want time to lapse before getting it posted.
Curry Thai Coconut Soup by Chef Joi
1 ¾ c Coconut Milk
3 t Braggs Amino Acids
1 t Chili Powder
1 T Olive Oil
3 ½ t Curry Powder
1 Roma Tomato
Blend coconut milk, amino acids, chili and curry powders, olive oil and ½ avocado until smooth. In a bowl place ½ avocado
and chopped tomato in a bowl. Pour ½ the soup in the bowl. En-Joi.
