Carrot Cheezy Sauce

And the Children Shall Lead Them…

Today I served as a volunteer speaker at S.L. Lewis Elementary School’s Health and Fitness Day. I was asked to speak on nutrition.  As the children from Pre-Kindergarten to fourth graders transitioned in and out of the room, I realized how much I really want everyone to be healthy.   Sharing information with these young people today exposed even more how dedicated I am to really helping people have a greater understanding of the food we eat.

I presented nutrition in a pictorial manner.  I showed the students pictures of food that resemble what they are good for like the slice of a carrot resembles an eye and eating carrots is good for eye health.  They were so receptive to the information.  It was amazing to watch the faces of people eager to learn something they can use right away.  I guess it has to do with the fact that children have not learned how to be cynical.

So as I was going over the foods, I thought about a great  recipe to share with you.

Carrot Cheezy Sauce

  • 1 c Carrots
  • 1 Portobella Mushroom
  • 1/4 c Tahini
  • 2 T Apple Cider Vinegar
  • 2 t Cumin
  • 2 t Sea Salt
  • 1 t Turmeric
  • ¼ c Nutritional Yeast

Process all ingredients until smooth.

Great as a dip or sandwich spread or pour over kelp noodles.
