Almond Super Balls

Okay this recipe raised quite a few eyebrows.  Most of the time when I name recipes, I try to use a name that will tell you what the dish is.  With this one I didn’t even think of any other implications the title had.  Needless to say, I was able to share a lot of laughs with folks as they were tasting this one during Meatless Monday at Sevananda.

Almond Super Balls by Chef Joi

½ c Buckwheat Groats

1 c Pumpkin Seeds

½  c Goji Berries

1 c Raisins

2 T Agave Nectar

1 c Almond Butter

½ c Coconut, shredded

Process ¼ c coconut and ¼ c goji berries until well broken down.  Pour into a shallow dish and set aside.

Process buckwheat groats, pumpkin seeds and ¼ c goji berries until all are broken down significantly.  Add raisins, agave
nectar, almond butter and ¼ c coconut.  Process into a paste.  Shape into balls.  Roll balls in coconut/goji mix.  Enjoi.
